Method
- Gather 4 glasses, mason jars, or clear cups. The visual layers are half the appeal.
- Spoon 2 tablespoons of yogurt into the bottom of each cup.
- Add a layer of berries, then a layer of granola.
- Repeat the layers: yogurt, berries, granola. End with berries on top.
- Drizzle honey or maple syrup over each parfait. Add a mint leaf if you are feeling fancy.
- Serve immediately for maximum crunch, or refrigerate for up to 2 hours (the granola will soften slightly but it is still delicious).
Notes
For meal prep, store the granola separately and add it just before eating to keep it crunchy. Mason jar parfaits with granola on the side make a great grab-and-go breakfast too.
