Vegetarian Burrito Bowl

These burrito bowls are healthier than takeout and infinitely customizable. Start with cilantro lime rice, add seasoned black beans, and pile on your favorite toppings. The beauty of burrito bowls is everyone can build their own. Set out all the toppings buffet-style and let everyone customize. It’s perfect for feeding a crowd or meal prepping lunches for the week.

Ingredients
  

  • 2 cups rice
  • Juice of 2 limes
  • 1/4 cup cilantro, chopped
  • 2 (15 oz) cans black beans
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 cup corn
  • 1 cup salsa
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1 cup cheese, shredded
  • Lettuce, chopped

Method
 

  1. Cook rice, stir in lime juice and cilantro. Take your time here and make sure everything is evenly distributed. I like to use a large bowl so there's plenty of room to work.
  2. Heat beans with cumin and chili powder.
  3. Warm corn.
  4. Divide rice among bowls.
  5. Top with beans, corn, salsa, avocado, sour cream, cheese, and lettuce. This is your chance to make it look as good as it tastes! A little garnish goes a long way for presentation.
