Strawberry Spinach Salad

This salad tastes like spring. Sweet strawberries, crunchy pecans, and tangy balsamic dressing make every bite interesting. It’s fancy enough for company but easy enough for weeknight dinners. The combination of flavors is addictive—sweet, savory, and tangy all at once. Make the candied pecans ahead of time and this salad comes together in minutes.

Ingredients
  

  • 6 cups fresh spinach
  • 2 cups strawberries, sliced
  • 1/2 cup pecans
  • 2 tablespoons sugar
  • 1/4 cup crumbled feta
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper

Method
 

  1. Cook pecans with sugar in a pan until caramelized. Make sure your pan is properly heated before adding ingredients — you should hear a nice sizzle. Don't overcrowd the pan or things will steam instead of getting that beautiful golden color.
  2. Combine spinach and strawberries.
  3. Make dressing with oil, vinegar, honey, salt, and pepper. Always taste as you go — you can add more seasoning, but you can't take it away!
  4. Top salad with candied pecans and feta. This is your chance to make it look as good as it tastes! A little garnish goes a long way for presentation.
  5. Drizzle with dressing just before serving.
