Mediterranean Quinoa Bowl

Ingredients
  

  • 2 cups cooked quinoa
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cup chickpeas
  • 1/2 cup feta cheese
  • 1/4 cup tahini
  • Juice of 2 lemons
  • 2 tablespoons olive oil
  • 1 clove garlic
  • Salt and pepper

Method
 

  1. Combine quinoa, cucumber, tomatoes, onion, chickpeas, and feta. Take your time here and make sure everything is evenly distributed. I like to use a large bowl so there's plenty of room to work.
  2. Whisk tahini, lemon juice, olive oil, garlic, salt, and pepper. Always taste as you go — you can add more seasoning, but you can't take it away!
  3. Thin dressing with water if needed.
  4. Drizzle dressing over bowls.
  5. Toss to combine.
