Method
- Combine quinoa, cucumber, tomatoes, onion, chickpeas, and feta. Take your time here and make sure everything is evenly distributed. I like to use a large bowl so there's plenty of room to work.
- Whisk tahini, lemon juice, olive oil, garlic, salt, and pepper. Always taste as you go — you can add more seasoning, but you can't take it away!
- Thin dressing with water if needed.
- Drizzle dressing over bowls.
- Toss to combine.
