Lemon Poppy Seed Bread

This lemon bread is sunshine in loaf form. It’s bright, tangy, and perfectly sweet with that beautiful lemon glaze drizzled on top. The poppy seeds add little bursts of texture throughout. It’s equally good for breakfast, afternoon tea, or dessert. The lemon flavor is bold but not overwhelming—just the right balance of sweet and tart.

Ingredients
  

  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 2 eggs
  • 1/2 cup milk
  • 1/3 cup oil
  • Zest of 2 lemons
  • 1/4 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

  1. Preheat oven to 350°F. Make sure your oven is fully preheated before putting anything in — this ensures even baking from the very first minute.
  2. Mix flour, sugar, baking powder, salt, and poppy seeds. Always taste as you go — you can add more seasoning, but you can't take it away!
  3. Whisk eggs, milk, oil, lemon zest, and juice.
  4. Fold wet into dry ingredients.
  5. Pour into greased loaf pan.
  6. Bake 50-55 minutes. Every oven is a little different, so start checking a few minutes early. You're looking for a golden color and a wonderful aroma filling your kitchen.
  7. Make glaze with powdered sugar and lemon juice.
  8. Poke holes in warm bread, pour glaze over.
