Chocolate Zucchini Bread

This chocolate bread is so rich and moist, no one will guess it’s made with zucchini. It’s the perfect way to use up summer squash while making something that tastes like dessert. Ingredients
  

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 1 1/2 cups shredded zucchini
  • 1 cup chocolate chips

Method
 

  1. Preheat oven to 350°F. Make sure your oven is fully preheated before putting anything in — this ensures even baking from the very first minute.
  2. Mix flour, cocoa, baking soda, and salt. Always taste as you go — you can add more seasoning, but you can't take it away!
  3. Beat eggs, sugar, oil, and vanilla.
  4. Stir in zucchini.
  5. Fold in dry ingredients.
  6. Add chocolate chips.
  7. Pour into greased loaf pan.
  8. Bake 55-60 minutes. Every oven is a little different, so start checking a few minutes early. You're looking for a golden color and a wonderful aroma filling your kitchen.
  9. Cool completely before slicing. I know it's tempting to dig in right away, but this resting time allows everything to set properly and makes a real difference in the final result.
