Method
- Combine all ingredients in a medium bowl and stir until everything is evenly mixed and the mixture holds together when pressed.
- If the mixture feels too dry, add another tablespoon of maple syrup. If too sticky, add a tablespoon of oats.
- Roll into 1-inch balls using slightly damp hands (this prevents sticking).
- Place on a parchment-lined plate or tray and refrigerate for at least 30 minutes until firm.
- Transfer to an airtight container and store in the fridge for up to a week.
Notes
These freeze perfectly. Lay them on a sheet pan to freeze individually, then transfer to a freezer bag. Grab a few in the morning and they will thaw by snack time.
