Apple Cinnamon Energy Bites

Tiny, no-bake, and forgiving. These energy bites taste like fall even in July — like apple pie filling rolled into something you can pop in your mouth between soccer practice and piano lessons.

Our after-school routine used to be a disaster. Everyone was hungry and cranky the second they walked through the door. Now I keep a container of these in the fridge and the transition from school to home is about 80% smoother. They grab two or three, the blood sugar stabilizes, and suddenly homework does not feel like a hostage negotiation.

The beauty of these is that they take about ten minutes to make and they last all week. No baking, no special equipment, just a bowl and your hands. My kids call them apple pie balls, which honestly is a better name.

Apple Cinnamon Energy Bites

No-bake energy bites that taste like apple pie. Made with oats, dried apples, cinnamon, and almond butter.

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1/2 cup dried apple pieces finely chopped
  • 1/3 cup almond butter or peanut butter
  • 3 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp ground flaxseed optional
  • 1 pinch salt

Method
 

  1. Combine all ingredients in a medium bowl and stir until everything is evenly mixed and the mixture holds together when pressed.
  2. If the mixture feels too dry, add another tablespoon of maple syrup. If too sticky, add a tablespoon of oats.
  3. Roll into 1-inch balls using slightly damp hands (this prevents sticking).
  4. Place on a parchment-lined plate or tray and refrigerate for at least 30 minutes until firm.
  5. Transfer to an airtight container and store in the fridge for up to a week.

Notes

These freeze perfectly. Lay them on a sheet pan to freeze individually, then transfer to a freezer bag. Grab a few in the morning and they will thaw by snack time.
